Cucumber PicklesView larger Cucumber Pickles Pickled cucumbers, or simply “pickles,” are a quintessential fermented food. The first record of pickles comes from ancient Mesopotamia. Such diverse historical figures as Aristotle, Julius Caesar, Shakespeare, Amerigo Vespucci, and Thomas Jefferson are reported to have been fond of pickles. Indeed, Amerigo Vespucci, after whom America was named, was a pickle vendor before he became a world explorer. Pickles play a significant role in the food culture of many countries, from North America through Europe and into the Middle East. Preparation: 1. ) If your cucumbers are at all soft, if you bought them at the store, and/or if you suspect that they might have been picked a while ago, you can perk them up by soaking them in ice water. 2. ) Trim the blossom ends off your cucumbers. These ends contain enzymes that can contribute to “hollow pickle syndrome. ” 3. ) Combine the chlorine-free water and salt in the pitcher, and add any starter or vinegar, if using. 4. ) Place the seasonings and tannin providers at the bottom of the jar or crock, followed by the cucumbers. 5. ) Pour the brine into the crock. 6. ) Weight everything down in such a way that it stays submerged. 7. ) If needed, cover the top of the jar or crock with the cloth, and affix the cloth with the rubber band. 8. ) Store at cool room temperature. Every day after the second or third, pull out a pickle, cut off a piece with a clean knife, and taste it. When the pickles are pleasantly sour but still crunchy, they are done. Move them to a cool place (like the refrigerator) immediately. Yield: 3–4 pounds (1.5–2 kg), Prep time: 10 minutes, Total time: 3 days–2 weeks Equipment: Knife; Cutting board (wood is ideal); 1-gallon (4-L) pitcher; ½-gallon (2-L) mason jar, a Pickl-It, a Harsch crock, or a plain glazed (lead-free) ceramic crock; Something to hold the cucumbers under the brine, like a small clean plate or saucer that fits inside the jar or crock (if needed); Clean dishtowel or cloth to cover the top of the jar or crock along with a rubber band (if needed). I had purchased other Fermenting books before I bought this one. I should have started out with this one instead. Cover many types of foods, vegetable, milk meat etc. The best thing is that he explains what started to use and why. Also has some good recipes that don’t take much time but give good results. If you are starting with Fermentation, I would recommend this book. You might save money by not buying other books that really don’t explain what you need to know.

This is a fabulous book; I'm loving it so far! The author does a great job of taking the "scary" out of fermentation. He also does a great job offering non-mainstream information without being militant about food choices. (Not that anyone reading a book about fermentation is likely to disagree with him, but still...he's tactful, not pushy.)One of my favorite things about this book is the almost step-by-step development of it. Ferments are divided into several larger categories (like fermented vegetables vs. fermented dairy). Beyond that, though, the entire book is set up roughly from easiest or simplest to the most complicated, with chapters building on each other. That makes this a great book to work through in order (more-or-less), ferment by ferment, as a sort of textbook to learn the processes. I haven't gotten very far in terms of actually completing the recipes -- only to sauerkraut, which is first -- but that's the plan and I'm feeling more confident about learning with this book than others I've read.I would have liked to see a "what do I do when...?" section, because I did run into some issues while preparing my kraut. None of them were major, but I was thankful I had some people to ask, because I would otherwise have found myself a little "stuck." Most notably, he doesn't address (unless I missed it) how to get your food to stay under the surface of the liquid. As this is something I have consistently had difficulty with when making any preparations that involve leaving vegetable matter to sit submerged in fluid for a while, I doubt I'm the only beginner likely to run into this, and I wish he had tackled it.Still, I'm pretty excited about this book and it's beautiful step-by-step recipe photos, and would highly recommend it for beginners like me.

I am only on chapter 2 and although the information by the end of the book may be valuable, I felt compelled to inform potential buyers of one thing .... it is very wordy. I'm finding the book cumbersome to read because the author is very conversational and talks about making our own food and taking control "especially at a time in history when many of us feel at the mercy of events, governments, corporations, and industrial food producers." I'm more of a 'just the facts' type of person. I want to learn about fermenting, not sit by a fireside drinking wine and having a leisurely philosophical discussion about it. I have already ordered a different book hoping for information that gets to the point faster.

After spending the last couple of years making drinks that go fizz, it was time for me to turn my attention to foods that go fizz... in a good way.I already had a couple of fermentation books (Art of Fermentation, Cultured Food Life), but once I got this one it quickly became the only one I turned to. At any one time I usually have at least three of the recipes contained herein bubbling/festering away. (Currently Carolina slaw, crème fraîche and yogurt.)The pictures are clear, the explanations are thorough, and everything's shown and explained so well you can't wait to just do something - provided the ingredients are on-hand, of course. And most importantly the results are great! (Or in internet-speak, nomnomnom.)One of my dogs even liked this book - so much so that he took it off the bookshelf and consumed half the introduction while I was out one day. It's that good of a book that although the recipes are still all intact, I'm considering buying it again so I have a pristine copy to be able to leaf through and mull what to try next.

I just made my first jar of Sauerkraut and it was great. This is so amazing for two reasons.. one I never ever cook and two, I used to hate store bought sauerkraut. This is a well written easy read with great photos to help you though your first batches of fermentating stuff. lol. They gave me ideas on equipment (minimal but important to have the right stuff), then the recipes were drop dead simple and yet really really taste. I feel like a kitchen star! This book would make a great present for anyone interested in making their own Real food.

I checked this book out from the library and liked it so well that I bought myself a copy of it. It clearly explains how food fermentation works and includes recipes to follow. It gives you enough background information that you aren't just following the recipes, but are fully understanding how they work. I particularly like that it explains how you can adapt recipes to suit your own needs. Most cookbooks want you to use their recipes exactly, but this author encourages you to change them in ways that please you. The recipes are easy to follow and modify. They include full-color photographs of the steps so you can see what you should be doing instead of just reading about it. With it, I was able to make my own yogurt, strain it, and use the strained whey to start my own fermented vegetables. I am very happy with this book.

After seeing Glennon on Oprah I immediately bought this book for myself and my daughter, who is a young mother. I understood she was a blogger but didn't quite realize this was a collection of her blog posts (or at least it seems like it is), which are probably available on her site. I did enjoy her writing style and sense of humor, especially during the difficult times in life. I also appreciated her religious perspectives which were presented in ways that those who might not agree wouldn't feel judged or wrong (even though I agreed, that's important to me). I have been going through multiple traumatic experiences the past 10 years (husband's addiction and resulting separation and near-divorce) and was so inspired by her interview with Oprah, I was hoping to get some inspiration as I went through the latest roller coaster, breast cancer treatment. Aside from Glennon's addiction, which she dealt with before becoming a mom, and a marital issue that fortunately didn't break them (I wish she'd said how, or maybe that's her next book) it seemed her issues were those of a suburban mom (or First-World Problems as my kids used to call them). I am a suburban mom, but not really into some of the more materialistic things she is, so I didn't really relate to her. What I did envy were her ability to make friends and have such close intimate relationships that are real. When you are diagnosed with cancer, even pre-cancer caught early like me, people react weirdly. You quickly find out who are your real friends and who is willing to have "real" relationships. Unfortunately, I found nearly every blood relative wasn't going to "be there" for me and only had about enough non-blood relatives and friends to count on one hand, which was enough. As a result of their weird reactions, I didn't announce it to anyone beyond my inner circles. I was so disturbed by the realization that most people don't have (or maybe don't know how to have) "real" relationships like Glennon describes. I really hoped to learn how to transform my family relationships by making them more real, because the lack of support was devastating. So maybe I had unrealistic goals because I bought this book after her Oprah interview. She may be at a completely different place now than when she wrote this and I want to learn more from her now as the issues in this book are important ones more suburban moms can relate to, but they really aren't BIG life issues when you really need good close friends and deep relationships that are "real."

Glennon blogs on momastery.com and her brutally honest accounts of her life brought her popularity, then of course, a book deal.Glennon doesn't give two hoots about what others think. She isn't afraid to tell the world she was an alcoholic, a drug addict and a bulimic. And when she finally got rid of all those toxins in her life and embraced her new-found self, she was diagnosed with Lyme disease. At one point in her life she even got an abortion. Then she decided to adopt but her adoption plan fell through due to her background. So she adopted a highway instead (Yup!).She also wrote of friends, family and strangers who came to her aid when she needed it and/or supported her decisions, impetuous or not. She's very fortunate to be surrounded by people who love her as she is.What makes her stories stand out, to me, is definitely her honesty, almost too honest to be true sometimes. And the fact that she bares her ugly, crazy, messy life out for all to read, is just plain bravery. And the world thanked her for that. Because of her bravery, she gave hope. Because of her kindness, she shed light.Overall it's a pretty good read with some inspiring messages throughout. She can be pretty funny, taking the mickey out of Chaos here and there. But at times I'm not sure if every detail in her story is true or she's just spicing it up for the sake of readership. Like asking a 3 yo to write down what's she feeling. I don't know any 3 yo who can write. Or when she asked her son to look a bully in the eye. Really? What if the bully ended up hitting him? He's lucky he got off the hook so easily. Just my thoughts.What I got out of this book Live life with openness and honesty. Openness to embrace the challenges and changes that Life offers. Make whatever you want out of the lemons Life throws you. Be honest and true to yourself. Tune out the noise, tune in to your voice. The voice that tells you right from wrong. The voice that only you know is YOU. Just do what gives you joy and peace, because no matter what yo do, people are going to judge anyway.In times of crisis, sift. "...the Greek root of the word crisis is 'to sift', as in to shake out the excesses and leave only what's important." Eliminate the unwanted, keep what matters.Namaste.

Glennon is the most wonderful author I have every read. She's honest, raw, emotional, brilliant and so funny. I stumbled upon her through social media that lead me to her books. I feel like some one actually get's me after reading both her Warrior books. Empaths unite! Her books have made me feel more validated than anything else I've ever ready in my last 34 years. Thank you Glennon for your honesty! Bless you and "brutiful" soul!

I was a little apprehensive about this book but now I highly recommend it. The numerous references to the author's religious faith were just a natural part of her story, without the slightest hint of apostatizing. I respect and I'm happy for the author that her faith is such a support for her, even though it's not useful to me. The remainder of the book was fabulous. Don't read this book if you are easily offended. The author is about as real and honest and personally disclosing as one can be. And being so, provides the kind of support one usually gets only from a dear, long-term, close friend. I will hold onto this book for dipping into for future pick-me-ups!

For years, I have been reading references to Claude Shannon because of his involvement in so many critical developments in science, communications, Bell Labs, and even the stock market. About his sense of humor or his riding a unicycle through Bell Labs – while juggling (a favorite hobby). And about his groundbreaking, earth-shaking realization that all communication, from voice to music to documents to photos – is all data and could be treated the same way. Without this insight, I could not post this review today. But there was no way to get my fill of Claude Shannon – no biographies or documentaries of an American genius who lived until 2001! A Mind At Play begins to fill this yawning gap (and it seems a documentary is finally in the works as well).Shannon was a natural. He simply did. Whatever caught his eye. He invented machines all his life, designed them, machined them, theorized their optimization, and cleared the air on numerous topics that concerned them. His great gift to us was his reductionism. He could look at a problem and strip away the redundancies, the tangents, the superfluities – and the noise. Especially the noise. The bare core that was left was now addressable and solvable. With that, he could add back the other factors as needed. It made his solutions elegant. This clarity of vision is dispiritingly rare. That a man of his many other abilities had it has benefitted the world disproportionately.He was in it for the intellectual challenge. While other scientists won Nobel Prizes, fame, fortune, privilege and rank, Shannon shunned the limelight and kept working (and playing). “Down to Earth” doesn’t begin to describe him. His toy room served him to the end. He hated speeches, and preferred playing the clarinet (or chess) to lecturing. This was in no way a stock-standard scientist. His brilliance was evident to everyone throughout his long life. And he worked with all of the most brilliant.My favorite story in the book is when his young daughter brought out a package of toothpicks and dropped them all over the wood plank floor. Rather than scold her or instruct her to clean it right up, Shannon observed: ”You know, you could calculate the value of pi from that.” I also liked the index finger he installed in the basement toy room. When his wife wanted him to come upstairs, she pulled the cord in the kitchen and the finger curled upward. This man makes for a fascinating biography.Among his great discoveries was how to eliminate noise. Noise in the transmission of data corrupts it, making the message incomplete, wrong or unintelligible. Shannon broke down elements to their smallest, and assigned them numeric labels. If you gave (say) a letter a two digit equivalent, you would get a wrong letter if one of the digits was blurred by noise. By giving them longer strings of digits, they could tolerate noise and still be correct at the receiving end. This sort of outside the box thinking revolutionized countless industries.We owe Claude Shannon a lot, and Soni & Goodman’s book takes a big first step in paying that debt.David Wineberg

This is a book worth reading, my sense is it captures the essense of Claude Shannon's life and achievements. More importantly it does so whilst respecting his innate humble nature.I read Shannon's paper in my youth on information theory, it had a profound impact then and now. It still stands as a paper that changed my perception of what communication is. This book gives you insight into his life and his works - I recommend it.

A superb biography of a genius. It covers his entire history from his technical peaks to his tragic end in Alzheimer's disease. Wish it would have been possible that his personally imagined funeral could have been celebrated. The documentation of his life is deep and includes many photographs. The flow is perfectly paced and detailed. Enjoyed his lecture attended by Einstein in pursuit of tea and cookies at Princeton.If you ever puzzled through A Mathematical Theory of Communications it is a treat to see the man behind it's genius.Thank you Jimmy Soni and Robert Goodman for your great work!

One of my critiques of the technology industry is that there's not a rich body of work around the intellectual history of the space. This is starting to change, and this book by Soni and Goodman is an important addition. Shannon's a fascinating character and his personality comes through with various episodes, many concerning his family. Those are glimpses into his life that we've never had before, in fact, my general awareness of Shannon has transformed into specific knowledge - and it's compelling reading.The book seamlessly tells two stories - that of Shannon's work and of Shannon's life. There are obviously tradeoffs - this is not a technical treatise nor pure storytelling. It is a meticulously researched mix and it's a better book for that combination.The authors do us a service in taking both the man and his family as seriously as his work, I think. There's a lot to learn from his contributions to information theory. These areas are covered in a manner that makes it easy to consume. There's a lot to learn from his life. These areas are delivered in a manner that makes it easy to relate.

Scientists have various motives for doing what they do. Some, like Newton, are possessed by a need to explain the working of the universe to themselves. Some are ambitious, motivated by fame. Some are immensely curious. And some do it just because they find it tremendously fun. Richard Feynman certainly fell into that category, judging from his writings on the subject. So did Claude Shannon. A brilliant mathematical mind, he applied his intellect to a wide range of problems and projects. His Theory of Communication was perhaps the greatest achievement of applied mathematics of the post-WWII era. He also experimented with computing, robotics and machine learning, building a legendary maze-solving mouse in 1952. But he was also known for his less serious endeavors like juggling, unicycle riding, and building animated wooden puppets.This biography presents a detailed and interesting portrait of Shannon, his life, and his work, one that I thoroughly enjoyed.
